Baked Apple Rice

Ingredients:

  • 2 red apples
  • 1 cup cooked Basmati rice
  • 1/3-1/2 cup oat milk  
  • 1-2 tsp maple syrup
  • ½ tsp vanilla extract
  • cinnamon and cloves

Preparation:

  1. Core apples & season with cinnamon and nutmeg.
  2. Bake in your airfryer (or oven at 180 degrees C) till soft
  3. Scoop out the apple flesh  & discard skin
  4. Boil rice & mash soft apples with cooked rice, vanilla, maple syrup and oat milk
  5. Bake in your airfryer (or oven at 180 degrees C)  for 10 minutes & serve with a drizzle of maple syrup or sprinkle with coconut sugar.
